Ingredients

For the Salad:

  • 3 1/2 cups chopped cooked rotisserie chicken cold, 1 lb.
  • 2 cups chopped apples such as Gala, Fuji, or Golden Delicious
  • 1/2 cup chopped pecans toasted or raw
  • 2 green onions sliced (about 1/2 cup)
  • 1/3 cup dried cranberries roughly chopped

For the Dressing:

  • 1 5.3 oz container fat-free plain Greek yogurt (heaping 1/2 cup)
  • 3 Tbsp mayonnaise
  • 1 1/2 Tbsp apple cider vinegar
  • 1 1/2 Tbsp real maple syrup or honey
  • 1 Tbsp minced fresh rosemary
  • 1 tsp Dijon mustard
  • 1/8 tsp nutmeg optional
  • Salt and freshly ground black pepper to taste

Instructions

  • Prepare the Salad:
    In a large mixing bowl, combine the chopped rotisserie chicken, chopped apples, chopped pecans, sliced green onions, and chopped dried cranberries.
  • Make the Dressing:
    In a small mixing bowl, whisk together the Greek yogurt, mayonnaise, apple cider vinegar, maple syrup (or honey), minced rosemary, Dijon mustard, and nutmeg (if using). Season with salt and freshly ground black pepper to taste.
  • Combine Salad and Dressing:
    Pour the dressing over the chicken mixture and toss well to evenly coat all the ingredients.
  • Serve:
    Serve the chicken salad immediately on a bed of lettuce or in whole grain bread as a sandwich. If preparing ahead of time, store in the refrigerator for up to 2 days.

Notes

As the salad sits, the chicken may absorb some of the dressing and it might seem to dry up a bit. To refresh the salad, you can thin it with a little more Greek yogurt, mayonnaise, or water, depending on how creamy you prefer it.
