Ingredients

  • 2 slices of whole-grain bread or bread of your choice
  • 1 ripe avocado
  • 2 eggs
  • Salt and pepper to taste
  • Optional toppings: red pepper flakes sliced tomatoes, fresh herbs, or crumbled feta cheese

Instructions

Prepare the Avocado Spread:

  • Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl.
  • Mash the avocado using a fork until you achieve your desired consistency. Add a pinch of salt and pepper to taste.

Toast the Bread:

  • Toast the slices of bread until they reach your preferred level of crispness.

Cook the Eggs: You have a few options here

  • Fried Eggs: Heat a non-stick skillet over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny-side up, over-easy, etc.).
  • Scrambled Eggs: Whisk the eggs in a bowl and cook them in a skillet over medium heat, stirring until they're fully cooked.
  • Hard-Boiled Eggs: If you prefer, you can hard-boil the eggs, then slice them to place on top of the avocado spread.

Assemble the Avocado-Egg Toast:

  • Spread the mashed avocado onto the toasted bread slices.
  • Place the cooked eggs on top of the avocado spread.
  • Add additional toppings like red pepper flakes, sliced tomatoes, fresh herbs, or crumbled feta cheese if desired.

Season and Serve:

  • Sprinkle a little more salt and pepper on top, if desired, and serve your delicious Egg Avocado Toast immediately.
