Ingredients

  • 8 slices of bacon chopped
  • 2 cups of pineapple chunks fresh or canned, drained
  • 4 cups of cooked rice preferably day-old
  • 1 cup of diced bell peppers any color
  • 1 cup of diced carrots
  • 1 cup of peas
  • 4 green onions sliced
  • 4 cloves of garlic minced
  • 4 eggs beaten
  • 1/4 cup of soy sauce
  • 2 tablespoons of sesame oil
  • Salt and pepper to taste
  • 4 tablespoons of cooking oil vegetable or canola
  • Optional: minced ginger chili flakes, cilantro, lime wedges

Instructions

Prepare Ingredients:

  • Chop the bacon into small pieces.
  • Dice the bell peppers and carrots.
  • Slice the green onions.
  • Mince the garlic.
  • Drain the pineapple chunks if using canned.

Cook the Bacon:

  • Heat a large skillet or wok over medium heat.
  • Add the chopped bacon and cook until crispy, about 5-7 minutes.
  • Use a slotted spoon to remove the bacon and place it on a paper towel-lined plate to drain excess fat.
  • Leave about 1-2 tablespoons of bacon fat in the skillet; drain any excess.

Scramble the Eggs:

  • Push the bacon to one side of the skillet, or remove it temporarily if the skillet is too crowded.
  • Add the beaten eggs to the other side of the skillet.
  • Scramble the eggs until fully cooked, then mix them with the bacon. Remove the bacon and eggs from the skillet and set aside.

Cook the Vegetables:

  • In the same skillet, add the cooking oil if needed.
  • Add the minced garlic (and ginger, if using) and sauté until fragrant, about 1 minute.
  • Add the diced bell peppers, carrots, and peas. Cook until the vegetables are tender, about 5 minutes.

Add the Rice and Pineapple:
