- 8 slices of bacon chopped
- 2 cups of pineapple chunks fresh or canned, drained
- 4 cups of cooked rice preferably day-old
- 1 cup of diced bell peppers any color
- 1 cup of diced carrots
- 1 cup of peas
- 4 green onions sliced
- 4 cloves of garlic minced
- 4 eggs beaten
- 1/4 cup of soy sauce
- 2 tablespoons of sesame oil
- Salt and pepper to taste
- 4 tablespoons of cooking oil vegetable or canola
- Optional: minced ginger chili flakes, cilantro, lime wedges
Prepare Ingredients:
Chop the bacon into small pieces.
Dice the bell peppers and carrots.
Slice the green onions.
Mince the garlic.
Drain the pineapple chunks if using canned.
Cook the Bacon:
Heat a large skillet or wok over medium heat.
Add the chopped bacon and cook until crispy, about 5-7 minutes.
Use a slotted spoon to remove the bacon and place it on a paper towel-lined plate to drain excess fat.
Leave about 1-2 tablespoons of bacon fat in the skillet; drain any excess.
Scramble the Eggs:
Push the bacon to one side of the skillet, or remove it temporarily if the skillet is too crowded.
Add the beaten eggs to the other side of the skillet.
Scramble the eggs until fully cooked, then mix them with the bacon. Remove the bacon and eggs from the skillet and set aside.
