Instructions

Prepare the Beets:

  • Turn on the oven to 400 °F (200 °C).
  • Beets should be well cleaned, with any tops or tails removed.
  • Wrap each beet in aluminum foil separately.
  • When the beets are ready, poke them with a fork. Place the wrapped beets on a baking sheet and bake in the preheated oven for 45 to 60 minutes.
  • The beets should be taken out of the oven after roasting, let to cool, and then the skin peeled. Gloves can assist you avoid having stained hands.

Slice and Assemble

  • Cut the peeled beets into thin slices or bite-sized cubes, depending on your preference.
  • In a large salad bowl, arrange the mixed salad greens.
  • Add the sliced beets, crumbled cheese, chopped toasted walnuts, and thinly sliced red onion on top of the greens.
