  • 2 stalks celery chopped
  • 1 medium red bell pepper chopped

  • 8 cups low-sodium vegetable broth
  • 1 medium head green cabbage halved and sliced

Instructions

  • Add the low-sodium vegetable broth, sliced green cabbage, and chopped tomato. Increase the heat to medium-high and bring the mixture to a boil.
  • Once it reaches a boil, reduce the heat to maintain a simmer. Partially cover the pot and cook until all the vegetables are tender, which should take about 15 to 20 minutes more.
  • Remove the pot from the heat and stir in the white-wine vinegar.
