Ingredients

  • 1 pound 450g of peeled and diced fresh carrots
  • 1 small onion diced finely
  • 2 minced garlic cloves
  • a mug of veggie broth and two
  • water 1 cup
  • Olive oil 2 tablespoons
  • 1/8 teaspoon of cumin powder
  • Fresh parsley or chives can be used as a garnish to taste.

Instructions

  • Olive oil should be heated in a sizable pot over medium heat. Garlic and onions that have been chopped should be added and sautéed until transparent.
  • Cumin powder and diced carrots should be added to the pot. During the few minutes of cooking, stir occasionally.
  • Add the water and veggie broth. The mixture is heated until it boils, then it is simmered. Cook the carrots in the covered pot for 20 to 25 minutes, or until they are soft.
  • After taking the saucepan from the heat, let the soup cool somewhat.
  • The soup should be smooth and creamy after being pureed using an immersion blender. In the absence of an immersion blender, carefully transfer the soup in batches to a standard blender.
  • Use an immersion blender to puree the soup until it's smooth and creamy. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches.
  • Return the pureed soup to the pot and reheat it over low heat. Season with salt and pepper to taste.
  • Serve the carrot soup hot, garnished with fresh parsley or chives if desired.
