Ingredients

  • 2 large chicken breasts (boneless and skinless)
  • 2 bell peppers (preferably different colors, thinly sliced)
  • 1 large onion (thinly sliced)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 head of lettuce (romaine or iceberg, chopped)
  • 1 avocado (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup chopped cilantro (optional)
  • Lime wedges for serving
  • Salsa (sour cream, or your favorite dressing for topping)

Instructions

  • Prepare the Chicken: Slice the chicken breasts into thin strips. In a bowl, mix the chicken strips with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper until evenly coated.
  • Cook the Chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken strips to the skillet and cook for 5-6 minutes, or until cooked through and nicely browned. Remove the chicken from the skillet and set aside.
  • Cook the Peppers and Onions: In the same skillet, add a little more olive oil if needed. Add the sliced bell peppers and onions to the skillet. Cook for 5-6 minutes, or until the vegetables are tender and slightly charred.
  • Assemble the Salad: Arrange the chopped lettuce on a large serving platter or individual plates. Top the lettuce with the cooked chicken, peppers, and onions. Add sliced avocado, cherry tomatoes, shredded cheese, and chopped cilantro on top.
  • Serve: Serve the Chicken Fajita Salad immediately with lime wedges on the side for squeezing over the salad. You can also offer salsa, sour cream, or your favorite dressing for topping.
