- 4 large eggs
- 1 cup fresh spinach (chopped)
- 1/2 cup feta cheese (crumbled)
- 1/2 cup cherry tomatoes (halved)
- 1/4 cup red onion (finely chopped)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Preheat the Oven: Preheat your oven to 375°F (190°C).
Prepare Ingredients: Chop the spinach, tomatoes, and red onion. Crumble the feta cheese.
Sauté Vegetables: In an oven-safe skillet, heat olive oil over medium heat. Add the chopped red onion and sauté until softened, about 2-3 minutes. Add the chopped spinach and cook until wilted.
Beat Eggs: In a bowl, beat the eggs until well combined. Season with salt and pepper.
