Ingredients

  • 4 medium-sized tomatoes (chopped into chunks)
  • 1 cucumber (sliced or chopped)
  • 1 red onion (thinly sliced)
  • 1 green bell pepper (seeded and chopped)
  • 1/2 cup Kalamata olives (pitted)
  • 4 ounces about 113g feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional: a few sprigs of fresh parsley or mint for garnish

Instructions

  • In a large salad bowl, combine the chopped tomatoes, cucumber, red onion, green bell pepper, and Kalamata olives.
  • In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper to make the dressing.
  • Pour the dressing over the salad ingredients and toss gently to coat everything evenly.
  • Crumble the feta cheese over the top of the salad.
  • Garnish with fresh parsley or mint, if desired.
  • Serve immediately as a refreshing side dish or light meal.
