- Quiche Crust:
- 1 1/4 cups all-purpose flour
- 1/2 cup cold butter cubed
- 1/4 cup ice water
- Quiche Filling:
- 1 cup fresh cheese Gruyere or fresh mozzarella, shredded or diced
- 1/2 cup bacon diced
- 1/4 cup cherry tomatoes halved
- 4 eggs
- 1/2 cup fresh milk
- Salt pepper, and nutmeg
Prepare the Quiche Crust:Mix the flour and cubed butter in a bowl. Use your fingers or a pastry cutter to blend the butter into the flour until it resembles coarse crumbs.Gradually add ice water and gently knead until the dough forms a ball. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Prepare the Quiche Filling:In a large bowl, whisk together the eggs and fresh milk. Add the shredded cheese or diced cheese, diced bacon, halved cherry tomatoes, a pinch of salt, pepper, and a dash of nutmeg. Mix well. Make the Mini Quiche:Preheat the oven to 350°F (180°C).Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Cut out small circles and line a mini muffin tin with the dough circles, forming mini crusts.Pour the prepared quiche filling into each crust. Bake:Place the mini quiches in the preheated oven and bake for approximately 15-20 minutes or until the crust turns golden brown and the filling is set. Serve and Enjoy:Allow the mini quiches to cool slightly before serving. They pair wonderfully with a hot cup of coffee for breakfast or as a delightful addition to a light brunch.
