Ingredients

  • 1/2 cup creamy peanut butter
  • 1/4 cup honey or maple syrup (you can adjust the sweetness to taste)
  • 1 cup rolled oats (quick oats work fine too)
  • 1/2 teaspoon vanilla extract
  • Optional: a pinch of salt if using unsalted peanut butter

Instructions

  • In a medium-sized mixing bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. If your peanut butter is unsalted and you prefer a hint of saltiness, you can add a pinch of salt at this stage.
  • Stir the mixture until it's well combined and smooth.
  • Gradually fold in the rolled oats, making sure they're evenly coated with the peanut butter mixture.
  • Once the oats are fully incorporated, use a spoon or your hands to scoop out small portions of the mixture. Roll each portion into a ball and then gently flatten it to form a cookie shape. You can also use a fork to create a criss-cross pattern on top of each cookie for decoration, if desired.
  • Place the cookies on a plate or tray lined with parchment paper.
  • Let the cookies set in the refrigerator for at least 30 minutes to firm up.
  • Once firm, your No Bake Peanut Butter Cookies are ready to be enjoyed! Serve them as a delicious snack or dessert for yourself and up to three other lucky individuals.

Notes

These cookies can be stored in an airtight container in the refrigerator for several days. Enjoy!
