  • 1 carrot (diced)
  • 1 celery stalk (diced)
  • 1 garlic clove (minced)
  • 1.5 tablespoons all-purpose flour
  • 2 cups chicken or vegetable broth
  • 1/2 cup water
  • 1/2 pound potatoes (peeled and diced)
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup whole milk or heavy cream
  • Fresh parsley (chopped for garnish)

Instructions

Prepare Ingredients:

  • Cut the salmon into bite-sized chunks.
  • Chop the onion, carrot, celery, and garlic.
  • Peel and dice the potatoes.

Sauté Vegetables:

  • In a small pot, melt the butter over medium heat.
  • Add chopped onion, carrot, celery, and garlic. Sauté until the vegetables are tender.

Make Roux:

  • Sprinkle flour over the sautéed vegetables and stir well to create a roux. Cook for 2-3 minutes.

Add Broth and Water:

  • Gradually pour in the chicken or vegetable broth while stirring continuously.
  • Add water, diced potatoes, thyme, salt, and pepper. Bring the mixture to a simmer.

Cook Potatoes:

  • Simmer until the potatoes are tender, usually around 10-15 minutes.

Add Salmon:

  • Gently add the salmon chunks to the pot and cook until they are just cooked through, around 5-7 minutes.

Finish with Cream:

  • Pour in the whole milk or heavy cream and stir well. Allow the chowder to heat through without boiling.

Adjust Seasoning:

  • Taste the chowder and adjust salt and pepper according to your preference.

Serve:

  • Serve the Salmon Chowder hot and savor the cozy flavors in this perfectly portioned meal for two.
