- 1/2 pound fresh salmon (skinless and cut into chunks)
- 1.5 tablespoons butter
- 1/2 small onion (finely chopped)
- 1 carrot (diced)
- 1 celery stalk (diced)
- 1 garlic clove (minced)
- 1.5 tablespoons all-purpose flour
- 2 cups chicken or vegetable broth
- 1/2 cup water
- 1/2 pound potatoes (peeled and diced)
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup whole milk or heavy cream
- Fresh parsley (chopped for garnish)
Prepare Ingredients:
Cut the salmon into bite-sized chunks.
