Ingredients

For the Spicy Chicken:

  • 1.5 lbs about 700g boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

For the Couscous:

  • 1.5 cups couscous
  • 1.5 cups chicken broth or water
  • 1 tablespoon olive oil
  • Salt to taste

For Garnish:

  • Fresh cilantro or parsley chopped
  • Lemon wedges

Instructions

  • In a bowl, mix the ground cumin, ground coriander, paprika, chili powder, salt, and pepper. Add the chicken pieces to the spice mix, ensuring they are well coated. Allow it to marinate for at least 15-30 minutes.
  • Heat 2 tablespoons of olive oil in a large skillet or pan over medium-high heat. Add the marinated chicken pieces and cook until browned and fully cooked, about 20-25 minutes. Make sure to turn the pieces to cook evenly.
  • While the chicken is cooking, prepare the couscous. In a separate pot, bring the chicken broth (or water), olive oil, and salt to a boil. Stir in the couscous, cover with a lid, and remove from heat. Let it sit for about 5 minutes until the couscous absorbs the liquid. Fluff it with a fork.
  • Once the chicken is cooked, combine it with the cooked couscous in the pan. Toss gently to mix, allowing the couscous to absorb the flavors of the chicken.
  • Serve the Spicy Chicken Couscous on a platter or individual plates. Garnish with chopped cilantro or parsley and serve with lemon wedges on the side.
