Instructions

  • Start by cooking your choice of grains according to the package instructions. You can use quinoa, brown rice, farro, or any whole grain you prefer. Once cooked, fluff the grains with a fork and set them aside.
  • In a large skillet, heat the olive oil over medium heat. Add the fresh spinach and cook for 2-3 minutes, or until it wilts. Season with a pinch of salt and pepper. Remove from heat and set aside.
  • In the same skillet, add a little more oil if needed. Crack the eggs into the skillet and fry them to your preferred level of doneness, keeping the yolks runny for a delightful, creamy texture.
  • Start by dividing the cooked grains among four serving bowls.
    Top each bowl with the sautéed spinach and halved cherry tomatoes.
