Ingredients

  • 8 cups baby spinach leaves
  • 1 cup cherry tomatoes halved
  • 1/2 English cucumber sliced
  • 1/4 cup thinly sliced red onion
  • 1 avocado diced
  • 1/4 cup toasted almonds or walnuts
  • Optional: 1/4 cup crumbled feta or goat cheese

For the Dressing:

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper to make the dressing. Set aside.
  • In a large salad bowl, combine the baby spinach leaves, cherry tomatoes, cucumber slices, red onion, diced avocado, and toasted almonds or walnuts. If using, sprinkle the crumbled feta or goat cheese on top.
  • Drizzle the dressing over the salad, starting with a small amount, and toss gently to coat the ingredients evenly. Add more dressing as needed, but be careful not to overdress the salad.
  • Once the salad is evenly dressed, divide it among 4 serving plates or bowls.
