Ingredients

  • 2 medium-sized bitter melons
  • 200 g ground pork (or substitute with ground chicken or tofu for a vegetarian option)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 4 cups chicken or vegetable broth
  • 2 green onions, thinly sliced (for garnish)
  • Fresh cilantro leaves (for garnish)

Instructions

  • Prepare the bitter melons by cutting them in half lengthwise and scooping out the seeds and pith with a spoon. If desired, you can also peel the outer skin of the bitter melons. Rinse the hollowed-out bitter melon halves under cold water and set them aside.
  • In a mixing bowl, combine the ground pork, chopped onion, minced garlic, soy sauce, oyster sauce, sesame oil, sugar, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  • Stuff each bitter melon half with the pork mixture, pressing the filling firmly into the cavity. You may need to use your fingers to pack the filling tightly.
  • In a large pot, bring the chicken or vegetable broth to a gentle simmer over medium heat. Carefully add the stuffed bitter melon halves to the pot, making sure they are submerged in the broth.
  • Cover the pot and let the soup simmer for about 30-40 minutes, or until the bitter melons are tender and the filling is cooked through.
  • Once cooked, ladle the Stuffed Bitter Melon Soup into serving bowls. Garnish with sliced green onions and fresh cilantro leaves.
