Ingredients

  • 1 summer squash
  • 1 zucchini
  • 1/2 cup sliced black olives
  • 3/4 cup Italian dressing
  • 1/2 tsp salt
  • 1/4 cup Parmesan cheese
  • 1 lb cheese tortellini
  • 1 pint cherry tomatoes 1/2 red onion, 2 cups fresh baby spinach
  • 1/2 cup chopped Italian parsley

Instructions

  • Begin by preparing the tortellini according to the package instructions. After cooking, drain them well and let them cool in a large bowl in the refrigerator.
  • While the tortellini is cooking, take the summer squash and zucchini and slice them into 1/4-inch rounds. Quarter the rounds and place them in a sizable bowl. Sprinkle the squash and zucchini with salt, mixing well.
  • Halve the cherry tomatoes, slice the red onion into 1/4-inch half moons, and soak it in cold water to mellow its sharp taste. Chop the parsley finely. If the baby spinach leaves are large, chop them too.
  • Once the tortellini has cooled, layer the salad with cherry tomatoes, red onion, zucchini, squash, baby spinach, and sliced black olives. Drizzle the salad with 1/2 cup of Italian dressing for that perfect healthy touch.
  • Now, sprinkle the salad with chopped Italian parsley and Parmesan cheese. Finish it off with the remaining 1/4 cup of Italian dressing. Give it a good toss and you're ready to enjoy your healthy salad! How simple and healthy is that?

Notes

Look for fresh tortellini in the refrigerated section of your supermarket.
You should soak the purple onion in cold water for a few minutes to lose its strong pungent taste.
