  • 1 can 15 oz black beans, drained and rinsed
  • 1 large onion finely chopped
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 1 zucchini thinly sliced
  • 1 cup corn kernels fresh or frozen
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup fresh cilantro chopped
  • Juice of 1 lime
  • 1 ripe avocado sliced
  • 1 cup cherry tomatoes halved
  • 4 large whole wheat tortillas

For the Sauce

  • 1/2 cup plain Greek yogurt
  • 2 cloves garlic minced
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Instructions

Prepare the Vegetables

  • In a large skillet, heat a bit of olive oil over medium heat. Add onions and sauté until translucent.
  • Add red and yellow bell peppers, zucchini, and corn. Cook until vegetables are tender yet still crisp.
  • Stir in black beans, ground cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes. Remove from heat.

Make the Sauce

  • In a small bowl, mix Greek yogurt, minced garlic, lemon juice, salt, and pepper. Set aside.

Assemble the Burritos

  • Warm the tortillas slightly in a dry pan to make them pliable.
  • Lay out each tortilla and spoon a portion of the vegetable and bean mixture in the center.
  • Top with cooked brown rice, fresh cilantro, avocado slices, and cherry tomatoes.

Drizzle with Sauce

  • Squeeze fresh lime juice over the filling, then spoon the yogurt sauce on top.

Fold and Serve
